Patterns for Fly-Tying

Quite a number of people who are coming to visit us ask me about tying patterns for our favourite flies,
so that they can tie up flies themselves before they come.
It seems to be rather difficult to find details - especially for Irish shrimp patterns -
so I have tried to provide some information here. 
If you come across any more information which you think would be useful for other guests,
